No-flour High Protein and Fibre Delicious Muffin Recipe
Who doesn't love freshly baked muffins from the oven!? Check out recipe below for a delicious no flour recipe that is nutrient dense and can also be gluten-free.
Ingredients for about 10-12 muffins:
- 2 bananas
- 2 eggs
- 150g/1 cup blueberries
- 250g/1 cup nut butter (we chose 100% pure almond butter and some 100% pure pistachio butter)
- 40-50g/ 1/3 cup Quaker multigrain oats
- 1 tsp baking powder
- 2 tsp honey (optional)
- Nuts or chocolate chip as topping
Steps
Blend all the ingredients above until smooth, pour into muffin cups and bake it at 180 degrees celcius for 25 minutes.
Why this recipe is healthier
Even if the calories are slightly higher due to the nut butters, this recipe is arguably better for you than a standard muffin because:
Higher Protein: Between the eggs and nut butter, these will keep you full much longer.
Fiber: The oats and blueberries provide more fiber than white flour.
No Refined Flour: It avoids the "sugar crash" associated with traditional baked goods.
It is also gluten-free, just ensure that you purchase oats that are certified gluten-free as some may be manufactured in factories that also come into contact with gluten ingredients.
